Mexican Street Corn Salad

  • 600 g corn kernels (or from 6 corn cobs)
  • 100 g diced radishes (about 4-5)
  • 4 spring onions, white and green parts, finely chopped
  • Bunch of fresh coriander, plus extra for garnish
  • 200g grated cheese of your choice, plus extra for garnish
  • 15 ml lime juice (from 1 lime)
  • 2 tsp salt
  • 1 tsp The Spice Club black pepper
  • 100 ml Mayonnaise
  • 2 tbsp The Spice Club Mexican spice mix
  • 1 tsp The Spice Club Cayenne (optional to spice up the dressing)
  • The spice club topping (optional for garnish)


  1. Heat a grill pan over medium heat. Add the corn kernels and grill until nicely caramelized and toasted, about 5-7 minutes.
  2. Place the grilled corn in a large bowl and add the radishes, scallions, cilantro, and Cotija cheese.
  3. In a separate bowl, mix the lime juice, sea salt, black pepper, mayonnaise and The Spice Club Mexican spice mix.
  4. Pour the mayonnaise mixture over the corn and vegetables and mix well.
  5. Serve the salad garnished with extra crumbled Cotija cheese and fresh cilantro. Enjoy!
