Enjoy a tasteful Mexican StreetCorn salad with grilled corn, fresh vegetables and a spicy chipotle mayonnaise dressing. This simple recipe is perfect for summer meetings and barbecues. With the wonderful addition of Cotija cheese and The Spice Club Mexican spice mix, this salad becomes a true taste sensation. ingredients

4 people

  • 600 g maïskorrels (of van 6 maïskolven)
  • 100 g in blokjes gesneden radijsjes (ongeveer 4-5)
  • 4 lente-uitjes, witte en groene delen, fijngehakt
  • Bosje verse koriander, plus extra voor garnering
  • 200 g geraspte kaas naar keuze, plus extra voor garnering
  • 15 ml limoensap (van 1 limoen)
  • 2 tl zout
  • 1 tl The Spice Club zwarte peper
  • 100 ml Mayonaise
  • 2 el The Spice Club Mexicaanse kruidenmix
  • 1tl The Spice Club Cayenne (optioneel om de dressing wat pittiger te maken)
  • The spice club topping (optioneel ter garnering)

preparation

  1. Verhit een grillpan op middelhoog vuur. Voeg de maïskorrels toe en grill ze tot ze mooi gekarameliseerd en geroosterd zijn, ongeveer 5-7 minuten.
  2. Doe de gegrilde maïs in een grote kom en voeg de radijsjes, lente-uitjes, koriander en Cotija-kaas toe.
  3. In een aparte kom meng je het limoensap, zeezout, zwarte peper, Mayonaise en The Spice Club Mexicaanse kruidenmix.
  4. Giet het mayonaise-mengsel over de maïs en groenten en meng goed.
  5. Serveer de salade gegarneerd met extra verkruimelde Cotija-kaas en verse koriander. Enjoy!
