This baking tray Portobello Fajitas are a simple and healthy dinner full of crispy vegetables and tasteful mushrooms. Perfect with guacamole and coriander!

  • 4 tl The Spice Club Fajita mix
  • 2 el olijfolie
  • 1 el limoensap (van 1 limoen)
  • 600 g portobello champignons, in dikke plakken van 2 cm gesneden
  • 1 rode ui, in plakjes gesneden
  • 1 rode paprika, in plakjes gesneden
  • 1 oranje paprika, in plakjes gesneden
  • 1 gele paprika, in plakjes gesneden
  • 8 Kleine tortilla's, verwarmd
  • Guacamole, voor serveren
  • Verse koriander, voor serveren

preparation

Step 1: Preheat the oven

  • Verwarm de oven voor op 200°C en bekleed een bakplaat met bakpapier.

Step 2: Portobellos and Vegetables Herbs

  • Meng in een grote kom de fajita mix, olijfolie en limoensap. Voeg de portobello champignons, rode ui, en de drie soorten paprika toe aan de kom en roer goed zodat alles gelijkmatig bedekt is met de kruiden.

Step 3: Prepare baking tray

  • Verspreid de gemarineerde portobello's en groenten in een enkele laag op de voorbereide bakplaat.

Step 4: Baking

  • Bak de groenten 20-25 minuten in de oven, of tot ze zacht en licht gekarameliseerd zijn. Roer halverwege de baktijd even door.

Step 5: Filling tortillas

  • Vul de warme bloemtortilla's met de gebakken portobello champignons en groenten.

Step 6: Serve

  • Serveer de portobello fajita's met guacamole, verse koriander en eventueel wat extra limoensap.
