This delicious coconut soup combines creamy coconut milk, red lentils and aromatic garam masala herbs for a delicious meal. With the addition of roasted cashew nuts and a touch of lime, this is a tasteful and nutritious soup. Perfect for a fast and healthy meal!

4 people

  • 2 eetlepels olie
  • 1 grote ui, fijngehakt
  • 4 teentjes knoflook, fijngehakt
  • 1 eetlepel verse geraspte gember
  • 4 eetlepels The Spice Club Garam Masala mix
  • 1 blik (800g) tomatenblokjes
  • 450g rode linzen, gewassen en uitgezocht
  • 2 liter water, groente- of kippenbouillon
  • Versgemalen zwarte peper naar smaak
  • 1 blik (400ml) kokosmelk
  • Sap van ½ limoen
  • Gehakte koriander, voor garnering
  • Cashewnoten, geroosterd en gehakt

preparation

Step 1: Bake the base

  • Verhit de olie in een grote soeppan op middelhoog vuur.
  • Voeg de ui, knoflook en gember toe en bak tot de ui glazig is, ongeveer 5 minuten.
  • Voeg de garam masala kruidenmix toe en bak 1-2 minuten mee tot het geurig is.

Step 2: Add the lentils and broth

  • Voeg de tomatenblokjes met sap toe en roer goed door.
  • Voeg de rode linzen en de bouillon toe en breng aan de kook.
  • Zet het vuur lager en laat het 20-25 minuten zachtjes koken tot de linzen zacht zijn.

Step 3: Add the coconut milk

  • Roer de kokosmelk erdoor en warm de soep goed door zonder het te laten koken.
  • Breng op smaak met zwarte peper en limoensap.

Step 4: Serve

  • Garneer de soep met verse koriander en geroosterde cashewnoten.
  • Serveer warm met een partje limoen.
