ingredients
4 persons
8 chicken thighs or chicken feet with bone and skin
2 tablespoons of olive oil
4 teaspoons The Spice Club Chicken
6 cloves garlic, peeled
6 medium shallots, peeled and halved
2 punnets of cherry tomatoes
½ cup halved and pitted dates (optional)
1 cup green olives, pitted
100ml dry white wine (optional)
280g cooked rice, to serve
Salt and pepper to taste
preparation
Preheat the oven to 200°C.
Rub the chicken thighs with The Spice Club chicken seasoning.
Heat the olive oil in a large ovenproof pan over medium heat.
Fry the chicken thighs until golden brown on both sides, about 4-5 minutes per side.
Add the garlic, shallots, cherry tomatoes, dates and green olives to the pan.
Add the white wine (if using) and bring to the boil.
Season with salt and pepper.
Cover the pan and place it in the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Serve the chicken Provencal with boiled rice.
