Tomato salad with Sa'atar and Feta

Recipe

This Mediterranean tomato salad with za'atar, feta and toasted pine nuts brings together fresh flavours. With basil, mint and a honey-lemon dressing, it's a perfect summer salad.

ingredients

4 Persons

  • 450 g tomatoes (about 3 medium sized)
  • 350 g mixed cherry tomatoes
  • 1 lemon, juice and zest
  • 1 clove garlic, finely chopped
  • 6 tbsp extra virgin olive oil
  • 2 tbsp za'atar
  • 50 g pine nuts
  • 2 tsp honey (or more to taste)
  • 100 g Greek feta, crumbled
  • Bunch of basil leaves
  • Bunch of mint leaves

preparation

Step 1: Prepare the tomatoes

  • Cut the medium tomatoes into wedges and halve the cherry tomatoes.
  • Place all the tomatoes in a large bowl.

Step 2: Roast the pine nuts

  • Heat a dry frying pan over medium heat.
  • Add the pine nuts and toast them, stirring, for 3-4 minutes, until golden brown. Be careful not to burn them. Remove from heat and set aside.

Step 3: Make the dressing

  • Grate the lemon for the zest and squeeze the juice. Add both to a small bowl.
  • Add the minced garlic, 6 tbsp olive oil, 2 tbsp za'atar, honey and a pinch of salt and pepper to the bowl.
  • Beat everything together well until you have a smooth dressing.

Step 4: Mix the salad

  • Add the crumbled feta, basil, mint and toasted pine nuts to the tomatoes.
  • Pour the dressing over the salad and toss gently to combine all the ingredients.

Step 5: Serving

  • Divide the tomato salad among plates and serve immediately for a fresh, crunchy bite.
