Step 1: Preparing the sweet potatoes

  • Schil de zoete aardappelen en snijd ze in kleine blokjes.
  • Hak de ui en rode paprika fijn.
  • Spoel de zoete aardappelblokjes af onder koud water om overtollig zetmeel te verwijderen.

Step 2: Baking vegetables

  • Verhit 2 eetlepels olijfolie in een grote pan op middelhoog vuur.
  • Voeg de gehakte ui en rode paprika toe. Bak ze tot ze zacht worden.

Step 3: Prepare sweet potatoes

  • Voeg de blokjes zoete aardappel toe aan de pan en breng ze op smaak met THE SPICE CLUB POTATO kruidenmix.
  • Bak de zoete aardappelen tot ze gaar zijn en licht knapperig (ongeveer 20 minuten).

Step 4: Add eggs

  • Breek de eieren voorzichtig boven het zoete aardappelmengsel.

Step 5: Make spicy garlic sauce

  • In een kleine kom, meng 2 eetlepels lichte mayonaise, 2 eetlepels vetvrije Griekse yoghurt, 1 theelepel hete saus (pas naar smaak aan) en fijngehakte knoflook. Roer goed door elkaar.

Serve the sweet potato egg hash with a spoon of the spicy garlic sauce and possibly some The Spice Club topping for extra taste. Enjoy this simple and tasty dish, perfect for weekday meals!
