2 large sweet potatoes
1 onion
1 red pepper
2 tablespoons of olive oil
2 teaspoons THE SPICE CLUB POTATO spice mix
4 eggs
2 tablespoons light mayonnaise
2 tablespoons fat-free Greek yogurt
1 teaspoon hot sauce (adjust to taste)
2 cloves of garlic

STEP 1: Preparing the Sweet Potatoes
Peel the sweet potatoes and cut them into small cubes.
Finely chop the onion and red pepper.
Rinse the sweet potato cubes under cold water to remove excess starch.
STEP 2: Frying Vegetables
Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
Add the chopped onion and red pepper. Fry them until they become soft.
STEP 3: Prepare Sweet Potatoes
Add the sweet potato cubes to the pan and season with 2 teaspoons of THE SPICE CLUB POTATO spice mix.
Bake the sweet potatoes until tender and slightly crispy (about 20 minutes).
STEP 4: Add eggs
Carefully crack the eggs over the sweet potato mixture.
STEP 5: Make Spicy Garlic Sauce
In a small bowl, mix 2 tablespoons light mayonnaise, 2 tablespoons fat-free Greek yogurt, 1 teaspoon hot sauce (adjust to taste), and minced garlic. Stir well.
