Sweet potato with egg

An easy and healthy weeknight meal: Sweet Potato-Egg-Hash with spicy garlic sauce. A tasty and nutritious option.
ingredients

- 2 large sweet potatoes
- 1 onion
- 1 red pepper
- 2 tablespoons of olive oil
- 2 teaspoons THE SPICE CLUB POTATO spice mix
- 4 eggs
- 2 tablespoons light mayonnaise
- 2 tablespoons fat-free Greek yogurt
- 1 teaspoon hot sauce (adjust to taste)
- 2 cloves of garlic
- THE SPICE CLUB TOPPING (optional)
- salt and pepper to taste
preparation
STEP 1: Preparing the Sweet Potatoes
- Peel the sweet potatoes and cut them into small cubes.
- Finely chop the onion and red pepper.
- Rinse the sweet potato cubes under cold water to remove excess starch.
STEP 2: Frying Vegetables
- Heat 2 tablespoons of olive oil in a large saucepan over medium heat.
- Add the chopped onion and red pepper. Fry them until they become soft.
STEP 3: Prepare Sweet Potatoes
- Add the sweet potato cubes to the pan and season with 2 teaspoons of THE SPICE CLUB POTATO spice mix.
- Bake the sweet potatoes until tender and slightly crispy (about 20 minutes).
STEP 4: Add eggs
- Carefully crack the eggs over the sweet potato mixture.
STEP 5: Make Spicy Garlic Sauce
- In a small bowl, mix 2 tablespoons light mayonnaise, 2 tablespoons fat-free Greek yogurt, 1 teaspoon hot sauce (adjust to taste), and minced garlic. Stir well.
