Try this simple recipe for Greek griddle with chicken, potatoes, peppers, zucchini, onion and feta. The vegetables are first roasted in the oven and then combined with spiced chicken and creamy feta. Served with homemade tzatziki for a delicious meal.

  • 500g baby potatoes
  • 1 red pepper
  • 1 zucchini
  • 2 tablespoons of olive oil
  • 1 onion
  • 200g feta cheese
  • 500g chicken fillet
  • 2 tsp The Spice Club dried thymePURCHASE🛍️
  • 2 tsp The Spice Club dried oreganoPURCHASE🛍️
  • Salt and pepper to taste

Homemade tzatziki (optional):

  • 200g Greek yogurt
  • 1/2 cucumber, grated
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 tablespoon lemon juice
  • The Spice Club dill ·PURCHASE🛍️
  • The Spice Club mint ·PURCHASE🛍️
  • Salt and pepper to taste


STEP 1: Preheat and Roast Vegetables

  • Preheat the oven to 200 degrees Celsius.
  • Cut the potatoes into 2 or 4 pieces, cut the red pepper into strips and the zucchini into slices and then in half.
  • Drizzle the chopped vegetables with 2 tablespoons of olive oil and mix with 1 teaspoon of The Spice Club dried thyme and 1 teaspoon of The Spice Club dried oregano.
  • Spread the vegetables evenly on a baking tray lined with baking paper and bake them in the preheated oven for 20 minutes.

STEP 2: Prepare the Onion, Feta and Chicken

  • In the meantime, cut the onion into half rings and season the chicken with The Spice Club dried thyme and The Spice Club dried oregano, salt and pepper to taste.

STEP 3: Combine Everything and Bake

  • After 20 minutes, remove the baking tray from the oven and divide the onion, feta and seasoned chicken over the baking tray.
  • Bake everything in the oven for another 15-20 minutes. Check if the chicken is done.
  • Serve the Greek baking tray with homemade tzatziki and garnish with extra fresh herbs (The Spice Club thyme/The Spice Club oregano) if desired.

STEP 4: Homemade Tzatziki (Optional)

  • For homemade tzatziki, mix 200g Greek yoghurt, grated cucumber, finely chopped garlic, 1 tablespoon of olive oil, The Spice Club dill and The Spice Club mint leaves and 1 tablespoon of lemon juice in a bowl. Season with salt and pepper.
