Scrambled eggs with turmeric & spinach
Recipe
Enjoy creamy, spicy roaring eggs with spinach! Heat oil, bake garlic and spinach. Beat eggs with coconut milk and turmeric, add and stir to creamy. Serve on toasted bread. Perfect for a quick and healthy breakfast, lunch or dinner.
ingredients

- 2 tl olie
- 1 teentje knoflook, fijngehakt
- 200 g spinazieblaadjes
- 4-8 grote eieren
- 100 ml kokosmelk
- 4 tl The Spice Club Kurkuma · BESTEL 🛍️
- 4 sneetjes brood, geroosterd
- Peper & zout naar smaak
preparation
Step 1 Heat the coconut oil in a non-stick pan over medium heat. Briefly fry the garlic and add the spinach. Let shrink for a few minutes and add a dash of water if they fry.
Step 2 Beat the eggs with the coconut milk and turmeric. Season with salt and pepper. Add to the pan with spinach and stir in continuously for 5-8 minutes until the handyles have the desired consistency. Serve on roasted slices of bread.
