- 2 red onions
- 3 cloves of garlic
- 3 limes

- 720 g drained cooked black beans
- 30 g dark chocolate
- 1 tsp The Spice Club Paprika Powderr·PURCHASE🛍️
- Pinch of The Spice Club Cayenne pepper ·PURCHASE🛍️
- 75ml water
- Olive oil
For the topping
- 20 g raisins (optional)
- 20 g almonds (optional)
- 10 g The Spice Club Sesame Seeds ·PURCHASE🛍️
To Serve:
- 100 g Feta (optional)
- Tortilla Chips or Bread
preparation
Step 1: Prepare the Pickled Onions
- Peel and finely chop the red onions.
- Chop the garlic cloves.
- Place the raisins in a bowl and cover them with boiling water.
- In another bowl, mix half of the chopped onions with the juice of ⅔ of the limes. Season with salt.
Step 2: Make the Black Bean Mole
- Heat a dash of olive oil in a large pan over medium heat.
- Add the remaining chopped onions and stir-fry for 3-4 minutes until soft.
- Add the chopped garlic, dried oregano and cinnamon. Cook for 1 minute until fragrant.
- Pour the drained black beans and their liquid into the pan, along with the water. Stir, bring to a boil and reduce heat to low. Simmer for 10-15 minutes until the mixture is creamy, stirring occasionally.
Step 3: Prepare the Nutty Topping
- Coarsely chop the almonds.
- In a small frying pan over medium heat, toast the sesame seeds and almonds for 2-4 minutes until golden brown.
- Place the roasted sesame seeds and almonds in a bowl. Drain the raisins and add them. Grate the zest of ¼ lime into the bowl and mix well. Season with salt and pepper.
Step 4: Finish the Black Bean Mole
- Remove the cinnamon stick from the pan.
- Stir the dark chocolate, paprika powder and cayenne pepper into the black beans. Simmer for another 2-3 minutes.
- Taste and season with salt and pepper. Add a dash of water if necessary.
Step 5: Serve
- Divide the black bean mole among bowls.
- Sprinkle with crumbled Feta and the nutty topping.
- Place the pickled onions on top.
- Serve with tortilla chips and a lime wedge for squeezing. Enjoy your Black Bean Mole!
