VEGAN CHILE SIN CARNE

- 200 gr Wholegrain Rice
- 1 Onion
- 3 cloves Garlic
- 1 small can of tomato puree
- 1 pepper
- 800 g diced tomatoes
- 300 gr Kidney beans or lentils
- 200ml Yogurt
- Bunch of Coriander (optional for garnish)
- 2 avocados (optional for garnish)
- 1 Lime

- Salt & pepper to taste
preparation
Step 1: Cook the Brown Rice
- Start by cooking the brown rice according to the instructions on the package. Set the cooked rice aside.
Step 2: Prepare the Onion
- Heat a dash of oil in a large pan over medium heat.
- Add the finely chopped onion and stir-fry for 2-3 minutes, until the onion is translucent.
Step 3: Add Flavor
- Add the chopped garlic, tomato puree and THE SPICE CLUB MEXICAN spice mix to the pan.
- Stir-fry for 1 minute to release the flavors.
- Then add the tomatoes, beans and lentils to the pan.
Step 4: Simmer
- Simmer over low heat for 15-20 minutes until the sauce has thickened slightly and the ingredients are well mixed.
Step 5: Make the Topping
- In the meantime, prepare the topping by mixing yogurt with 2 scoops of THE SPICE CLUB MEXICAN spice mix.
- Optionally add some chopped coriander and the juice of a lime to taste.
Step 6: Serve
- Divide the cooked brown rice among bowls and add the chili sin carne.
- If desired, garnish the chili sin carne with THE SPICE CLUB TOPPING for extra flavor and crunch.
