Chili Sin Carne (Vega)

Step 1: Cook the Brown Rice

  • Start by cooking the brown rice according to the instructions on the package. Set the cooked rice aside.

Step 2: Prepare the Onion

  • Heat a dash of oil in a large pan over medium heat.
  • Add the finely chopped onion and stir-fry for 2-3 minutes, until the onion is translucent.

Step 3: Add Flavor

  • Stir-fry for 1 minute to release the flavors.
  • Then add the tomatoes, beans and lentils to the pan.

Step 4: Simmer

  • Simmer over low heat for 15-20 minutes until the sauce has thickened slightly and the ingredients are well mixed.

Step 5: Make the Topping

  • In the meantime, prepare the topping by mixing yogurt with 2 scoops of THE SPICE CLUB MEXICAN spice mix.
  • Optionally add some chopped coriander and the juice of a lime to taste.

Step 6: Serve

  • Divide the cooked brown rice among bowls and add the chili sin carne.
